We did gingerbread houses last week and they sure are hard! You need a lot of hands to keep it all in tact.

They still look great =)
I think you're supposed to "glue" the house together with the icing first.
Let it set/dry overnight.
Then load it up with the decorations. Icing is more like cement than glue.
They still taste the same in any shape.
